Shayne provided a lovely review and mentioned that head chef Javiar at Moda Restaurant considered it the best wedding he has ever tasted :-)
The top tier is orange and almond cake with white chocolate ganache.
The middle tier is hazelnut mud cake with frangelico syrup and milk chocolate ganache.
The bottom tier is a fleur de sel milk chocolate mud cake, filled with salted caramel and dark chocolate ganache.

A very special cake this week. My mum turned 60!!!!! Happy birthday mum :)
Mum had no say in the design so I went with elegant and pretty, just like her.
The cake is a red velvet cake with white chocolate ganache.

Nikki and Scott married on Australia Day! Congratulations.
While I can't say it was against all odds, there were certainly many dramas along the way.
Married at Caloundra where I believe the weather fined up for a few hours just for them :)
I hope in the end it was a magical day and well done on pulling this wedding together in 4 weeks. Not many who could do that!
Wet and wild weather here in Brisbane certainly made caking difficult this week.
The cake is a vanilla bean buttercake with fresh strawberries and white chocolate ganache.

What is that saying - no good deed goes unpunished? It was an attempt to show my appreciation for your Facebook support however I feel hurt and disappointed that many of you are up in arms about the competition. This prize is a total value of $300 and is certainly not cheap. I am gifting time away from my children and valuable knowledge that I spent years, hard work and money learning myself. I hope you all appreciate that.

HOWEVER, in saying all of the above, I can see everyones point and I will admit in all my dithering to make a decision (because I wanted everyone to win), that particular rule was forgotten and I offer my sincerest apologies as you are correct in stating that it has not been made fair on those who strictly played by the rules. Thank you Mel for putting your names to your comments - I appreciate it and I do look forward to making more cakes in the future for such a lovely person who is not afraid to speak her mind!

Now, in order to rectify this situation, I have decided to change this gift to a two person tutorial. Having already announced Andrea as a winner, I feel I cannot go back on my decision, what is done is done so to speak.

Shoe Masterclass

You will learn how to create a shoe made of icing in a perfect finish and can choose your own colour and shoe design label. Shoe kits are currently being put together and will be available for purchase. They should include a heel mold, former and cutters. You can either pay for these kits upfront with your booking (purchase cost yet to be advised) or you can choose to purchase a kit on the day. However, only cash payments will be accepted if you wish to purchase on the day.

Sugar flowers
Will cover basic blossoms and filler flowers through to wiring, veining and putting a sugar flower together with floral tape.

Intermediate Cupcake Workshop
You must show some level of knowledge in covering cupcakes with buttercream and fondant or have completed the Beginners Fondant Cupcake Workshop to attend.
This workshop will include more advanced techniques including airbrushing & painting on fondant, working with the clay gun and some piping techniques.

Well I've been a bit slack with updating my blog so I'm trying to keep on top of things.

Exciting news that the Facebook Page has reached 2,000 likers. I'd like to do something special but I'm not sure what, I've received some suggestions in the past. I'm thinking a day of caking with me where you'll receive a baked cake to ganache and decorate under my tutorial.

Sad news at Vanilla Lily HQ

Well the time has come to make the announcement that the beautiful Belinda (my partner in crime at VL headquarters) has recently made the decision to hang up her apron and focus full time on her new beautiful little daughter Holly. It certainly hasn't been an easy decision for Belinda to make and we still remain close friends.

Some of you may know Belinda, some won't, but she has been on maternity leave from VL since March 2010. So whilst I've always made the comments on blogs and Facebook about 'we' and 'us' since she has been on leave it's more just a habit then anything else as it has been just me running the show for a little while.

I would like to assure everyone that it is still business here as usual and there is no intention on my part to depart the cakie world. All booked in orders are proceeding as normal :-)

Belinda, I wish you every success in your future ventures. I will miss you very much in the cakie business.

On a happier note, is anyone looking for a part time cakie job? Perhaps I will be needing some help down the track ;-)

We're are on a quest and we need YOUR help!

We want to find the best gluten and dairy free cupcake recipe in the world (well why not - if we just say Australia then it could mean there are better ones out there right????)
Right now we figure that the flourless orange and almond cake on our menu (gluten and dairy free) is pretty damn hot stuff. But guess what, we hear it's all you ever get when you live with these intolerances or lifestyle choices and we think that bites the big one..... So, we don't want to be like everyone else with the same old same old. We'll keep our gorgeous orange and almond cake on the menu, but we want MORE (of course - doesn't everyone?).

So here is the deal:
Email us your amazingly wonderful dairy and gluten free cupcake recipe (if it's a cake recipe it still has to work well as cupcakes ie rise well and not pull away from the papers after cooked). If we trial your recipe and love it so much we decide to add your recipe to our menu, you will win a cupcake courier. Does that sound like a good deal to you? hmmmmm what was that? you want cupcakes to go in it? Why the heck not! hehe... While we are at it, we'll throw in a half dozen decorated cupcakes for you to enjoy as well. Total Value $95.00.

Cakes in wet weather

We use fondant to make cake decorations and to cover our cakes. This type of icing usually firms up in normal weather. However in these miserable wet conditions in Brisbane, it is causing many dramas for cake decorators.

With so much moisture in the air, figurine creations and smooth fondant on cakes becomes soft and sticky and loses shape. It can sometimes lead to last minute design changes to accomodate for the moisture which can be frustrating.

If you're struggling with your own cake in this weather - you are not alone! The best way to help combat the moisture is to keep your decorations/cake in a ventilated box with a moisture absorber or two and keep the box in a dry air conditioned room.

Are you buying a custom designed cake? Be aware to not put your cake in the fridge or get it wet. Moisture is the enemy!

quoting your cake

When providing a quote for your cake, we factor in size, flavour, materials involved and artistic labour. The more detailed and intricate design your cake includes, the more expensive it will be. For example numerous sugar flowers involves hours of artistic labour and can increase your cost. Whether you go with dessert or coffee portions for your cake affects the size and hence the cost also. See below for more information on cake sizes.

I am a perfectionist and meticulous when it comes to creating your cake and can assure that your cake will be of the highest calibre in quality. All cakes include gourmet and imported ingredients as I believe your cake must taste as fabulous as it looks! This should be factored into when comparing quotes.

consultations

There are two options available when requesting a quote and design with Vanilla Lily. You can contact me via email or telephone to request a consultation questionnaire which will be emailed to you. This should then be returned via email which will enable me to provide you with an initial design concept and quote.

The second option is an off site in person consultation.

These consultations are obligation free and at no cost to you. Hours available for consultation are Thursday and Friday evenings or weekends.

Before choosing either option, I recommend you have chosen your event theme, colours flowers etc. With an in person consultation I suggest you bring with you pictures, colour swatches, notes, invitations and any other materials that may be relevant. This will give a better understanding of where you want to go in terms of design.

placing an order

Once your consultation is completed, you will be contacted via email with a formal quote and your terms and conditions. All quotes are valid for 14 days only. Once your quote is formally accepted, you will be forwarded an invoice and payment information.

A deposit of 50% is required and will be outlined in your invoice. This must be paid up front to secure your event date. Provision of your quote does not automatically secure your event date.

Bookings are taken up to 12 months in advance and I suggest you book early to avoid disappointment. I am usually booked out 3-4 months in advance.

Your cake serve size is required to quote your cake. This helps determine the size of the cake required to give you the best matching number of portions without cake wastage.

My cake serve size used is as follows:

Coffee portion - 1in x 1in x 4in height

Dessert portion - 2in x 1in x 4 in height

I offer cake tastings for in person consultations for a $20 fee. Your cakes will be in the format of 1/2 dozen cupcakes undecorated, this is because I do not freeze my cakes and your tasting is baked fresh for your consultation.

Please take into consideration I am a bake to order business and do not freeze my cakes. Therefore if you wish to choose your tasting flavour you may need to arrange your consultation around a time when I have your requested flavour available.

If you have not booked an in person consultation but still wish to do a cake tasting, you may order and purchase a minimum of one dozen undecorated cupcakes for a fee of $54. One flavour per dozen.

Please note the above prices and cupcakes are for cake tastings only as undecorated cupcakes are not usually sold as a retail product.

How exciting is that???? Further, we're going to photograph and detail the construction of your cake from start to finish and publish this on our blog and facebook page. This is so you can all see the process of how our cakes are made and how much work is involved in the construction of our creations!

The winner will be entitled to a 6 inch round triple layered ganached cake which is the size of our elephant cake as pictured above.

The deets of the giveaway:

The draw is to be held once Vanilla Lily Cake Design reaches over 1,000 likers on Facebook.
The draw will replace the regular monthly cupcake draw for the month that the cake draw is held. Normal cupcake draws will resume the following month.
To be eligible to enter the draw all you have to do is like our Facebook page.

Maternity Leave

Happy Birthday Chris!

This 'shoe' cake was ordered by his lovely girlfriend Emma who works at Black Pearl Epicure where we purchase some of our yummy gourmet ingredients.

The 'Puma Clyde' shoe is apparently the only shoe Chris likes to wear, hence the reason behind this cakes design.

Such fun to create and our biggest challenge was matching the colour and suede effect of the shoe. Our shoe cake is a little bigger in size to compensate the amount of serves required.

Hope the cake was a big hit and the surprise party went great Emma.

Married on Saturday, 10 April at the beautiful Walkabout Creek, The Gap.

The wedding colours were cream, latte and chocolate with the flowers being tulips and lilies.

In following with this theme we've created beautiful cupcakes covered with latte and cream icing and topped with pretty little edible tulips, lilies and pearl blossoms.

The tulip cupcakes are moist coconut with white chocolate ganache and the lily cupcakes are double vanilla bean buttercake with vanilla bean buttercream. The cutting cake is double vanilla bean buttercream layered with white chocolate ganache.

The stand is an 8 tier perspex stand owned by Vanilla Lily Cake Design and is available for hire. Here we've used 6 tiers which holds a cutting cake and 80 cupcakes (you can use as many or as little tiers as required).

We hope you enjoyed the cakes Alana and Liam as much as we had fun making them.
